Hi there!

I haven’t been here since last year!  Ok, so it has only been a month but I feel as though I have neglected my blogging duties.  I have been a busy little bee this first month of the New Year.  Work has been pretty busy, my parents are in town, I have 4 friends that are pregnant, and Mardi Gras is right around the corner.  Soooo much going on.  I must get things in order and get back to my baking and crafting.  It calms me and makes me feel good when I have something delicious to eat when I am done.  Always a plus!!

So for tonight’s calming session I made my Mother’s Mud Hen recipe.  This recipe is very simple and it is great with morning coffee or even a midnight snack with milk.  You decide which is your favorite.


1 stick of butter(Room Temp)

1 cup of sugar

2 egg yolk ( save the whites for the topping)

1 1/2 cups of self rising flour

1 tbsp vanilla

1 cup of brown sugar

1 cup of pecans


Cream the butter & sugar.

Add egg yolk one at a time.

Add flour and vanilla ( the mixture will be thick )

Spray a 9 x 9 pan with non stick spray.

Press the dough into the pan.

Make sure to press it up the sides as the topping will rise a bit.

In a small bowl whisk the egg whites until foamy.

Add 1 cup of brown sugar and 1 cup of pecans.

Mix well.

Add to the top of your dough.

Spread until it covers the entire area.

Place in a 350 oven for 25 minutes.

If the center is not firm bake at 5 minute intervals.

It took 30 minutes for mine.

Let cool completely before cutting.
