The weather has slightly cooled off in the morning and evenings here in Mobile.  That makes my heart skip a beat. I am in love with all things Fall!  I am ready to make comfort foods, bake delicious treats and decorate my new house. (fingers crossed)

So as you know this past Saturday was the Autumnal Equinox and I baked a wonderful little chicken penne dish for me and the Mister. It was delicious. One complete meal in one dish. I did have salad also but you know what I mean. So I will now share the easy recipe with you.

CHICKEN PENNE BAKE

2 – 3 LARGE CHICKEN BREASTS

TOMATO SAUCE

ITALIAN SEASONING

PENNE PASTA

SHREDDED CHEESE

OLIVE OIL

SALT & PEPPER

Cook pasta according to directions

Add enough tomato sauce to keep pasta moist.

Now cut your chicken into small cubes.Place them into a hot pan with a little olive oil on top

Season with Italian season and a little salt and pepper

Cover and let cook until done.

Add the chicken to the pasta

Sprinkle some cheese in and combine well

Add more sauce ( I like mine saucy) and cheese

Pour mixture into a baking dish and sprinkle more cheese on top

Bake at 350 for 25 to 30 minutes or until bubbling hot

Serve hot with french bread and a nice Italian margarita!
