Good afternoon,

I hope all is well.  I have some exciting news. . .  after a year of pursuing a new job I was finally offered a position with the medical office right down the road from my house!  I never gave up. I applied 3 times.  At my current job I was lucky enough to meet many wonderful people who also work at the medical office.  They got to know me and 3 of them personally emailed or called human resources on my behalf.  I am so thankful for the time and effort that they put in for me.  I start my new career September 31.  I am excited and very nervous.  But I know that it is all going to be great.

In honor of my new job, I decided to make something homemade.  I settled on turkey meatball subs.  I did not make the bread but the meatballs are homemade.  Easy and sooooo delicious.  You will want to run out and get supplies today!

Turkey Meatballs

1 pound ground turkey

1 egg

¼ cup Parmesan cheese

¼ cup breadcrumbs

1 tablespoon dry Italian seasoning

1 teaspoon salt

Tomato Sauce

1 28 oz can  basil garlic & oregano crushed tomatoes

2 teaspoons minced garlic

2 tablespoons olive oil

salt and pepper to taste

Heat olive oil in a large wide skillet on medium heat.

Add the olive oil and minced garlic and allow to gently simmer for 2 minutes or until garlic begins to turn golden in color.

 Add the can of crushed tomatoes and can of tomato sauce.

Sprinkle salt and pepper to taste, cover and allow to simmer for 10 minutes.

While the sauce is simmering, combine all the ingredients for the meatballs in a large mixing bowl until a soft dough like texture if formed.

Form into 1 inch balls using a scoop or by hand.

Gently place the meatballs in the tomato sauce while it’s simmering

(do not stir).

Allow to simmer for 15 minutes

 Gently shake the pan and simmer for an additional 10 minutes.

Serve with spaghetti, on rice or alone with bread.

Fresh Bread!

Hello Hel-lo!

A friend and I were talking the other day about recipes and she asked for my rustic bread recipe. That got me thinking that it has been forever since I made this bread.  So today I pulled out the recipe and got to work.  It really is the easiest recipe EVER!

Rustic Bread

Ingredients:

Ingredients24 fluid ounces (0.709 liters) warm water

1 1/2 teaspoons dried fast rising yeast

2 1/2 teaspoons sea salt

6 1/2 cups unbleached white bread flour

Pour warm water into a large mixing bowl. Add the yeast to the water and then the salt, mix well.

Add all the flour and mix thoroughly with a wooden spoon until ingredients are mixed. Don’t over knead.

Leave the bread dough in the mixing bowl and cover loosely.

Dough

Allow to rise for 2 hours, or until doubled in size.

2 hours later

Pre-heat the oven and place a baking sheet in there.

Tear off a large ball, about the size of a small melon, and knead it for about 1 minute with floured hands and on a floured board or place it in a greased and floured loaf tin.

Allow to rise for another 20 to 30 minutes.

Bake at 450 degrees Fahrenheit (232.2 degrees Celsius) for 30 minutes or until well-risen, brown and the loaf sounds hollow when it is tapped on the underside.

Remove the bread and cool on a cooling rack.

Look at the perfect crust in the sides and bottom…

Good Morning,

One year ago to the day and almost time of the morning I was startled awake by a phone call.  I did not recognize the number so I rejected it and shut my eyes.  Seconds later the phone rings again.  It was a woman’s voice introducing herself in a very matter of fact but professional way.  Then the most life changing words hit my ears.  Your Husband has been in an accident and he needs you to get here as soon as you can!    He was headed to work that Friday morning ( he rode a motor cycle, a  Triumph)  and he was still in our neighborhood.   A lady sitting at a stop sign on her cell phone never looked up when she decided to enter the intersection. She hit and ran over my husband.  When I approached the scene my heart was broken. It takes a lot to walk up on your husband lying there with his clothing being cut off.  Needles to say his body was broken but his spirit was not. He was calm and had his wits about him to make sure I stayed calm.  After 2 ambulance rides to 2 different hospitals, emergency spleen surgery, artery replacement in his crushed left arm and a rod in his right hip to fix the broken femur head, I finally took a breath!  Although I was not involved in the accident it is true what they say. . .  My life flashed before my eyes.  I have no idea how I could live my life with out my Husband.   We tell the people in our lives we love them and it is true but this made me realize that it is more than love. It is love, companionship, friendship, compassion, dislike, arguments,  jokes, fun times and sadness.  It is Life and mine would not be fulfilled without Stephen in it.

Thank goodness he is tough as nails and has made a remarkable recovery. He says he should have been a stunt man! He was blessed that day with a second chance at Life.  I feel like I got a wake up call as well.  Do not take life and Love for granted.  Make sure to tell those in your life that you Love them but be sure to show them everyday.  wess

Until they told me Stephen would recover from his accident. Then it was the second happiest day.

I can not imagine stumbling through life with out him beside me!

Well here I am to give the last post about my wonderful birthday weekend of camping and hiking.  We did a smaller hike up to Pulpit Rock.  It was a beautiful morning and the view was breath-taking.

Weird how we only ran into 3 people the entire time we were up there hiking.

All on different days.

While steaks sizzled on the grill, we sat and watched the sun set.

The evening could not have been more perfect.

I love you Stephen for planning such a wonderful birthday getaway.

As much fun as this trip was and sooooo relaxing. I was a bit ready to pack up and head back home.

I am ready to see my Fur Babies and get hugs and kisses from them.

So I am back with the second part of my wonderful camping adventure.

On our first hike of the trip which was the Lake trail, I was geared up and ready to go.

We took some photos and got right to it.

The view was beautiful.

It was a cooler morning which was nice but it got hot quick!

The Lake Trail is approximately 1 mile long. This trail has a more than 1,000 foot elevation change in the first 1/2 mile.

I did mention that this was my first hike EVER!

This photo was me at the bottom of the trail. I made it 1/2 way!

When we got to the bottom of the trail we grabbed a snack at the little store there. I heard the guy attendant say under his breath to the other attendant

” I guess they need a ride back up to the top. Another couple who thought they could handle the full hike.”

At that point I was determined to make the full hike!  I politely said thank for the snacks and that we were off for the hike back to the top!

He smiled a foot in mouth smile and I turned and trotted off!

Don’t judge me!

This is the start of the trail back up the mountain.

It was such a pretty day. But there were times that I felt as though I was climbing the Pass to Cirith Ungol.

All that was missing was Frodo, Sam and Gollum!  It was hot and the vertical climb was insane.

But I loved every minute of it.

We made it back in one piece and only 900 mosquito bites each.

We were totally ready for the cool shower and a nice relaxing evening listening to the insects sing us to sleep.
