So I totally know this is late but hey, I have a life too.  With work, the Fur Kids, and a Police husband, I am busy cleaning, cooking sleeping and relaxing (when I can).  So now I am writing my Samhian post.

At work we decided on a Sports them. I went as a referee as did my partner in crime.

The other girls dressed as a tennis, soccer, and baseball player.

We had a wrestler, and a handful of tail gaiters.

We all brought food and had a big Halloween feast.

It was fun and some of the other departments really went all out.  Our Medical Records department chose Hocus Pocus to dress up as.  I have to say that they won the day in my book.

They had a floating cauldron and the hanging cages with kids in them ( not real ones).

It was a long day at work but I was ready to head over to ritual with my friend Barbra.  Our lovely host had the house decorated to the 9’s.  They had over 300 kids come trick or treating to her house alone.

The fire pit was a blaze and we all gathered round for warmth and conversation.

Circle was set with beautiful lights as the spirit world lingered just on the other side of the thinning veil.

Paula and Cody graciously invited us in to circle.  It was a magical time to reflect on the  past year and what was to come in the new year.  You could feel those who had left this relm  reaching out to us. Letting us know they are there and to thank us for remembering them.

It was a wonderful evening.  I am so glad that I can be a part of such a fantastical group of people.

Now that November has started it is time to be thankful and show appreciation for all that we have in this dark time of year.  Love, shelter, friends, jobs, LIFE!  I think that I will post about what I am thankful for throughout November.  I challenge you to tell someone what you are thankful for too.

I was lucky enough to start my Halloween shenanigans  a week ago with the Witches Ball.  This year they paired up with a Local group that is in the Foot Parading Society during Mardi Gras her in Mobile, Alabama.  They are a Pirate society.  It was so much fun and I just love watching everyone in costume.  My friend Barbara went together.  She was a Pirate witch and I was a Leprechaun.  Fun times.  I have at least one other social Halloween gathering for sure but I hope I can find a few others to enjoy.  The night of the ball was also the Local  LODA Art Walk in Downtown Mobile, AL.  They have a Facebook page that shows some of the fun activities that they offer each month.  If you live in the area I recommend you check it out.

Oh my goodness what a day.

We had a nice summer storm come through this afternoon and the electricity at work went out.

Then it took forever for the computers to come back on-line. Total chaos. But all the girls at the Desk hung in and we got all the Patients signed in and to the proper waiting areas.

I was so happy to get home today because I have put together a little recipe for Fried green tomatoes.

 I have looked online for a healthy alternative to flour batter and I took bits and pieces of a few different recipes and made my own.

So her ya go.

A  healthier twist on a Good Ole Southern Favorite.

(Banting) Fried Green Tomatoes

1 egg

1 tsp heavy whipping cream

2 cups almond flour/meal

1 Tbsp Cajun seasoning ( you can use salt and pep)

1 cup coconut oil

2 green tomatoes

In a shallow bowl I put the egg and cream and beat with a fork

In a separate bowl I put the flour and season and mixed it well

Slice the tomatoes (terrible photo)

Heat the oil in a medium frying pan ( don’t get the oil too hot as it will start to smoke)

Dip the tomatoes in the egg wash then in the flour mixture, making sure that they are coated completely.

Place them in the pan and repeat with other tomatoes.

Cook on each side about 3 minutes, until golden brown, watching them to make sure that they are not burning.

Take them out and place them on a plate that has a paper towel on it to help soak some of the grease.

Let cool a little and serve with rémoulade sauce!

These were soooo delicious! I think that we could have gone with just cutting 1 tomatoes but hey, they did not last.

So I am off to grab a book and relax before bed. More deliciousness to come.

So I am back with the second part of my wonderful camping adventure.

On our first hike of the trip which was the Lake trail, I was geared up and ready to go.

We took some photos and got right to it.

The view was beautiful.

It was a cooler morning which was nice but it got hot quick!

The Lake Trail is approximately 1 mile long. This trail has a more than 1,000 foot elevation change in the first 1/2 mile.

I did mention that this was my first hike EVER!

This photo was me at the bottom of the trail. I made it 1/2 way!

When we got to the bottom of the trail we grabbed a snack at the little store there. I heard the guy attendant say under his breath to the other attendant

” I guess they need a ride back up to the top. Another couple who thought they could handle the full hike.”

At that point I was determined to make the full hike!  I politely said thank for the snacks and that we were off for the hike back to the top!

He smiled a foot in mouth smile and I turned and trotted off!

Don’t judge me!

This is the start of the trail back up the mountain.

It was such a pretty day. But there were times that I felt as though I was climbing the Pass to Cirith Ungol.

All that was missing was Frodo, Sam and Gollum!  It was hot and the vertical climb was insane.

We made it back in one piece and only 900 mosquito bites each.

We were totally ready for the cool shower and a nice relaxing evening listening to the insects sing us to sleep.

I am so happy to be writing  you today.  This past year was such a downer.  So much happened not only to me but to friends and family.  For starters my dog was diagnosed with cancer.  My mom was diagnosed with leukemia and in August my Husband was in a motor cycle accident where he was hit and run over!

Thanks to the powers that be my Mom and Husband are both alive and doing well.

 All things considered, I am feeling blessed. There are many times I want to huddle in a corner and feel sorry for myself because I had a bad day or because I am still looking for a better job but then I think of what my Mom and Husband have gone through in such a short period of time.  I slap myself on the hand and tell myself , “If you want change in your life then be that change.”  So I am doing just that. I am continuing to look for a job and I will strive to be a better wife, sister, daughter and friend.

When in doubt look around and see that there is always someone who has it much worse than you.

So hats off to two of the most important people in my life!

As you all know I work in the restaurant business as a server. And might I say that after 21 years of doing the same thing I have been rewarded with one very special things. . .  the best Girl Friends EVER!

This bunch of Ladies minus 2 (because they live in New York and North Carolina) make me laugh, and feel so blessed every time we get to hang out.

So this post is dedicated to all you special ladies out there.

Yeah, you know who you are! Thanks for putting up with me and being a part of my silly life!

A little fairy told me that there is a Mad Tea Party in the making. I am so happy to hear this news. Each year Mrs. Vanessa Valencia of A Fanciful Twist hosts a Blog Party dedicated to the maddest friends and followers she knows. There is food, art, crafts, music and much more.

So in preparation and anxious anticipation of the date, I am making a scrumptious dessert!

BETTER-THAN-INSTANT VANILLA CUPCAKES

starter

1 ¼ cups (lightly spooned in the measuring cup and leveled with a knife) flour

¾ cup granulated sugar

2 tsps baking powder

½ tsp salt

6 Tbs (3 oz) unsalted butter, melted and cooled

½ cup water

1 large egg, at room temperature

1 yolk from a large egg, at room temperature

1 Tbs vanilla extract

 Position an oven rack in the center of the oven and preheat oven to 375°F 

Line 12 regular-sized (2 ¾-inch diameter) muffin cups with paper or foil liners.

Put the flour, sugar, baking powder and salt in a medium or large mixing bowl and whisk to combine.

Put the melted butter, water, egg and yolk and vanilla in a small bowl and whisk until well blended.

Pour the wet ingredients over the dry and whisk until well blended and smooth, about 1 minute

I added chocolate chips to mine!!!

Portion the batter evenly among the prepared muffin cups, filling each about 2/3 full.

Bake in the preheated oven until a toothpick inserted in the center of a cupcake comes out clean, 14 to 16 minutes.

Move to a wire rack and let cool for 15 minutes.

Carefully remove the cupcakes from the pan, set them on a wire rack and let cool completely.

Frost as you please. Eat as many as you like, in thoughtful moderation and saving some to share.
